Cocoa-Peanut Butter Spirulina Energy Balls
Yield: 18-3/4 ounce balls
Cocoa and peanutbutter? Yes please. Grab a few of these delicious nuggets to power your on-the-go afternoon or weekend.
1 cup rolled oats
¼ cup peanut butter
1/3 cup honey
3 tbsp cocoa, plus extra for rolling balls in, if desired
1 tbsp chia seeds
¼ cup chopped, pitted dates
1 tbsp flax meal
2 ounces fresh spirulina
2-3 tbsp vanilla almond milk
Place all ingredients except almond milk in the bowl of a food processor.
Pulse until mixture is mixed well, no large pieces remaining.
Add almond milk and puree until mixture is fairly smooth.
Measure mixture as desired, roll into balls in palms of your hands, place on parchment-lined sheet or plate.
If rolling in cocoa, do so now; otherwise, cover in plastic wrap and freeze until ready to eat.
