Almond and Apricot Spirulina Energy Balls
Yield: 14-3/4 ounce balls
These delightful little snacks are a great way to take your fresh spirulina on the go!
½ cup raw almonds
½ cup dried apricots
3 dates, pitted
1 ounce Greenspring Farms Fresh Spirulina
2 tbsp raw sunflower seeds
½ tsp vanilla extract
1-2 tbsp vanilla almond milk, unsweetened
Optional: shredded coconut for rolling balls in for garnish
Place all ingredients in food processor, except almond milk and coconut, if using.
Pulse until mixture is mixed well, no large pieces remaining.
Add almond milk and puree until mixture is fairly smooth.
Measure mixture as desired, roll into balls in palms of your hands, place on parchment-lined sheet or plate.
If rolling in coconut, do so now; otherwise, cover in plastic wrap and freeze until ready to eat.
