Almond and Apricot Spirulina Energy Balls

Yield: 14-3/4 ounce balls

These delightful little snacks are a great way to take your fresh spirulina on the go!


INGREDIENTS

½ cup raw almonds

½ cup dried apricots

3 dates, pitted

1 ounce Greenspring Farms Fresh Spirulina

2 tbsp raw sunflower seeds

½ tsp vanilla extract

1-2 tbsp vanilla almond milk, unsweetened

Optional: shredded coconut for rolling balls in for garnish

INSTRUCTIONS

  • Place all ingredients in food processor, except almond milk and coconut, if using.

  • Pulse until mixture is mixed well, no large pieces remaining.

  • Add almond milk and puree until mixture is fairly smooth.

  • Measure mixture as desired, roll into balls in palms of your hands, place on parchment-lined sheet or plate.

  • If rolling in coconut, do so now; otherwise, cover in plastic wrap and freeze until ready to eat.
